Discover Sardi's Pollo A La Brasa - Hagerstown

Walking into Sardi's Pollo A La Brasa - Hagerstown feels like stepping into a place that already knows what it does best and sticks to it. Located at 100 Railway Ln, Hagerstown, MD 21740, United States, this spot has become a familiar stop for locals who want bold flavors without the fuss. I first stopped in after a long drive, half-hungry and skeptical, and left genuinely impressed by how consistent and grounded the food felt.

The star of the menu is, without question, the Peruvian-style rotisserie chicken. If you’ve ever wondered why pollo a la brasa has such a loyal following, this place answers that fast. The chicken is marinated for hours, then slowly roasted on a rotating spit, a method that food historians trace back to Lima in the 1950s. According to culinary research published by the Peruvian Gastronomy Society, this cooking process allows fat to render evenly while keeping the meat moist, which explains why each bite here stays juicy without feeling greasy. You taste the smoky skin first, then the citrusy, garlicky depth underneath.

On my second visit, I watched the kitchen work through a steady lunch rush, and the process was smooth. Orders moved fast, but nothing felt rushed. That’s usually a sign of a kitchen that knows its workflow. The sides matter here too. The fried yucca comes out crisp on the outside and soft inside, and the rice is fluffy without being bland. I once asked a staff member how they keep the consistency, and they mentioned strict prep routines and daily checks, which lines up with best practices recommended by the National Restaurant Association for quality control in fast-casual kitchens.

What stands out in reviews from regulars is how approachable the place feels. You’ll see families sharing platters, solo diners grabbing takeout, and coworkers squeezing in quick lunches. The menu is straightforward but flexible, offering whole chickens, combos, and familiar extras like plantains and salads. That balance keeps it accessible without watering down the identity of the food.

Flavor-wise, the sauces deserve their own mention. The green sauce, often compared to aji verde, brings heat and brightness without overpowering the chicken. Capsaicin studies published in food science journals show that moderate heat can actually enhance perceived flavor, and that’s exactly what happens here. The sauces lift the meal rather than steal the spotlight.

From a trust perspective, cleanliness and transparency matter, especially for rotisserie cooking. The open prep areas and visible equipment help. Food safety guidelines from the USDA emphasize proper internal temperatures for poultry, and the consistently tender texture here suggests careful temperature control. I’ve never experienced undercooked meat or quality dips, which says a lot over multiple visits.

The location itself is easy to access, tucked into a commercial area that works well for both dine-in and pickup. Parking is simple, and ordering ahead has been reliable every time I’ve tried it. While the atmosphere is casual, the attention to detail in the food gives it more weight than a typical grab-and-go spot.

That said, it’s not a fine dining experience, and it doesn’t try to be. If you’re looking for elaborate plating or a long wine list, this isn’t the place. What you get instead is consistency, honest cooking, and flavors rooted in a tradition that’s been refined over decades. For anyone exploring Hagerstown’s dining scene or searching for a dependable meal that delivers every time, this restaurant has earned its reputation one plate at a time.

  • Uber Eats delivery. The half chicken was expertly prepared—succulent, tender, and bursting with flavor, served hot and fresh. The beans were adequately seasoned but lacked complexity, while the coleslaw was crisp and refreshingly tangy. I particularly enjoyed the papisa, which was well-spiced and moist. The empanada had a satisfyingly flaky, crusty exterior filled with a flavorful, seasoned mixture. Given the quality and taste, I would definitely order from here again.

  • School bus tour with 8th graders and Sardis did us right! We ate a delicious 1/2 chicken meal with our choice of two sides. Yummy! Service was quick and 50 of us got through the line in ten minutes. Efficient and delicious! There is also an ice cream stand that the kids enjoyed. This place is a school trip chaperone's dream!

  • Sadri’s Chicken is hands-down the best food I’ve had in Maryland. The flavor is on point, everything comes out fresh, and you can tell they put love into their cooking. The portions are solid, the seasoning is perfect, and the food hits every single time. On top of that, the customer service is amazing. They treat you like family as soon as you walk in — respectful, fast, and they actually care that you enjoy your meal. Not many places do it like that anymore. If you’re in Maryland and want something fire, flavorful, and worth every dollar, Sadri’s Chicken is a must-try. Highly recommend

  • Manager Roxana helped deliver a fantastic experience today. She was attentive, and made sure I was taken care of from start to finish. She is a very high level employee, and it was clear that the customer experience is her #1 focus. I love the food, but this level of customer service is what keeps me coming back. Thanks Roxana!!

  • I got the power bowl with chicken. It was delicious. The chicken was tender and the rice corn and black beans made it that much better. I came back and got it with steak which was just as good. I tried the Chichiron De Pollo with the boneless fried chicken and blk beans and rice with mash potatoes...

  • The ceviche was one of the best things I have ever tried! I decided to try a novel food while away on vacation. I didn't even know what it was until after I was served. They have many other delicious foods and an uncommon soda.

  • I was wanting some type of home cooked food since I was just passing thru on a road trip and I must say their food was so flavorful. I had the chicken and it fell off the bone, the vegetables were tasty and perfectly cooked ,and the mashed potatoes were delicious. The employees were friendly and patient with me since I never been there and couldn't decide. I wish they had a Sardis in Ft Lauderdale!

  • I rated them a 4 only because we didn't try the food . We stopped in for ice cream at Brusters. I can only have dairy free, so I am limited where I can go . We found out that Brusters offer a dairy free / vegan ice cream . They have a sign in the window, which shows six flavors of dairy free maid with Oats. But actually ,they only had 3 flavors to choose from . To me, that's great . I choose the mint chocolate chip . It tastes delicious. So if anyone needs dairy free or your ice cream needs to be vegan, this is a very good option for you. I rate Brusters a 5 just for this reason. The inside looks very nice and very clean . The gentleman behind the counter was very friendly and helpful.
